This is a great-tasting and easy-to-cook recipe. U have made it several times. Today I am making it for friends that have family in the hospital so they don't have to worry about cooking! I'm sure they will ask for the recipe it's that good!

Great Soup! Did mine in a crock pot so I could leave the house. I know it's supposed to be a 30 minute recipe, but slow cooking it all day brought out the richness of all the flavors. i also added a can of canellini beans. My wife said it was one of the best soups I've ever made. It's a keeper.

Loved it! Making it again now.

Good stuff! Used rotisserie chicken, 1 can of tomatoes was rotel, didn’t have lime juice. We liked it anyway especially on a cold night!

It had just the right amount of heat for me as not too spicy. Easy to make and tasty will definitely make it again!

Super easy and delicious. Family doesn't like spicy things so I only added a pinch of the chilli and cayenne pepper, and omitted the jalapeno.

This turned out great we followed the directions exactly. We left out the Cayenne pepper. And added the corn at the beginning so it would cook a little with the onion. One of our favorites.

Very delicious and very convenient! I run the vegetables in a blender after sautéing them, along with the tomatoes and broth, and get a smooth base for the soup before adding the chicken and beans. My family loves it!

This soup was nice because it’s really easy to make and fast. I made it exactly as the recipe listed, but next time I would put less tomatoes, even my husband thought it had to much tomatoes and it needs a little more spice

Fast and delicious! Although I will definitely plan to have cilantro & avocado next time! Shelter in place leaves a lot to be desired! ☹️

Our favorite “go to” soup!! Sooo easy and always delicious!! I add extra chicken (the store bought rotisserie chicken works perfect!!) and always double the recipe for leftovers! The whole family (including three picky eater kids) always love it!!

The soup was great and easy to make. Be super careful with the jalapeños. I only put in a few seeds and it was spicy. However my family loves spicy foods.

Delicious!!! One of my favorite go to soups. Didn't have time to make homemade tortilla chips. Used restaurant style store bought chip and substituted serrano for Jalapeno. The whole family enjoys all the cheesiness goodness. Yum!!

Awesome! Perfect to make with leftover roasted chicken. I followed the recipe the first time, the second time I made it I didn't have cilantro and didn't have time to run to the store, both times it turned out great. My kiddos really love the torilla strips, they ended up eating a batch before it made it to any of the soup, I had to make more.

This is a delicious tortilla soup recipe. I used a rotisserie chicken and then roasted the carcass to make my own homemade stock the night before I made it. In addition to sautéing the onions I added some chopped celery and a small amount of chopped carrot into the mix. I didn’t have a jalepeno in my fridge but I did have a small can of chopped green chili’s in the pantry so I threw those into the sauté mix. They key to a good soup is a good broth. This broth is delicious and has a spicy kick. Makes up super quick and tastes like you fussed all day.

¡Deliciosa! Added fresh diced tomatoes to make up for the 1 can I didn’t have! Perfect!

FAQs

What is chicken tortilla soup made of? ›

Chicken tortilla soup actually is an authentic Mexican dish. The traditional soup is made with chicken broth, tomatoes, garlic, onion, chiles, and fried tortilla strips. There are also variations of the soup, like ones that include beans.

How to make chicken soup without drying out the chicken? ›

Cold-poaching the chicken breasts, then removing them until the end of the cooking process, guarantees a perfectly tender and juicy texture. Using stock reinforces the flavor of the broth, creating a more deeply flavorful soup.

What can I use to thicken my tortilla soup? ›

Add Flour Or Cornstarch

You can thicken soup by adding flour, cornstarch, or another starchy substitute. For the best results, never add flour or cornstarch directly to your soup. If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool.

How long is chicken tortilla soup good for in the fridge? ›

Storage Instructions

This easy tortilla soup will keep airtight in the fridge for 5 to 7 days or in the freezer for up to 6 months. Extra tortilla strips will keep in airtight at room temp for up to 5 days.

What is the liquid in chicken soup called? ›

Chicken broth is the liquid part of chicken soup. Broth can be served as is, or used as stock, or served as soup with noodles. Broth can be milder than stock, does not need to be boiled as long, and can be made with meatier chicken parts. Chicken bouillon or bouillon de poulet is the French term for chicken broth.

What goes well with chicken tortilla soup? ›

You can enjoy tortilla soup with many things, like tacos, burritos, and quesadillas. Mexican rice, chips with guacamole, roasted corn, black beans, and Mexican cornbread are also good choices.

What to add to chicken soup for more flavor? ›

Add peppercorns, bay leaves, thyme, poultry seasoning, basil, and parsley.

Does chicken soup taste better the longer you cook it? ›

While broth and stock both get richer and richer the longer you cook them, the problem is that the chicken meat will dry out and get tough if you let it go too long.

Should homemade chicken soup be covered while cooking? ›

Keep the soup at a steady simmer: Keep the pot partially covered and at a low simmer. You should see slow but steady bubbles and wisps of steam coming from the pot (although don't reduce the temperature so low that the water falls below 165°F or else the chicken won't cook through).

Why is my chicken tortilla soup watery? ›

Sometimes all your soup needs is a little more time on the stove. Allow your chicken tortilla soup to simmer uncovered for an extended period. The heat will help evaporate some of the liquid, naturally thickening the soup.

What does cornstarch do in soup? ›

Cornstarch, or corn flour, can be used to thicken soup through its high starch content. Cornstarch is a great thickener for soup because only a little bit is needed to significantly thicken a soup, and it will not affect the flavor profile of the soup.

Is it better to thicken soup with flour or cornstarch? ›

It's important to note that cornstarch has twice the thickening power of flour. If you need to substitute cornstarch to thicken liquid in a recipe that calls for ¼ cup (four tablespoons) flour, you only need two tablespoons cornstarch.

Can I eat 5 day old chicken soup? ›

A general rule of thumb is that soup can be stored in the refrigerator for about three days, but you should always taste your dish before deciding to reheat. A clear, vegetable-based soup with some acidity, such as tomatoes, may last longer. Chicken soup usually lasts three to five days.

Can you leave chicken tortilla soup out overnight? ›

Food should not be at room temperature for more than two hours. Shallow containers or small amounts of hot food can be placed directly in the refrigerator or rapidly chilled in an ice or cold water bath before refrigerating. Cover foods to retain moisture and prevent them from picking up odors from other foods.

Is 5 day old soup ok to eat? ›

Most soups can only last in a refrigerator for 3 to 4 days until they risk going bad, so make sure you place your cooled vegetable soup promptly in the freezer before this point. Make sure your soup lasts well by placing it in an airtight freezer-safe container.

Why is it called chicken tortilla soup? ›

It's hard to pinpoint exactly the origin of tortilla soup, but it is generally attributed to Central Mexico and especially popular in Mexico City, where it was possibly born in the nearby state of Tlaxcala (which in Nahuatl means “land of the corn” or “place where tortillas abound”).

Where is chicken tortilla soup from? ›

Although the exact origin of tortilla soup is unknown, it is known that it comes from the Mexico City area in Mexico. Traditional tortilla soup is made with chicken broth combined with roasted tomatoes, onion, garlic, chiles and tortillas, cut into strips and fried.

What does chicken soup contain? ›
